I think I’ll try and do this every day, since it’s the Christmas time. If you have any suggestions for good gifts, just holler 🙂

Gift Idea of the Day – December 01:
My parents want this for Christmas. I asked my mom, “What do you want for Christmas” and she, without having to think about it, said “I want Mario Kart Wii with Wii Wheel” Easy, peasy, right?

It’s a great game. I currently own it for the Wii and for the Nintendo DS. I love both versions 🙂

It’s a really good game for kids, as well. My kids play it whenever we let them. My daughter, who’s five, has the time of her life, and is actually getting pretty good. My son, who’s almost 4, loves just driving around in circles, :lol:.

With the Wii, you can also, if you have your Wii online, play against others online. You can play “regionally” or world-wide. Or, if you prefer, you can set up a room so that you can play with just a few select friends. 🙂 We’ve done all those.

{December 1, 2008}   Alton’s Paradise Macaroons

  • 2 (7 to 8-ounce) packages sweetened shredded coconut
  • 2 ounces sweetened condensed milk
  • Pinch kosher salt
  • 1 teaspoon vanilla extract
  • 4 large egg whites at room temperature
  • 5 ounces granulated sugar
  • 12 ounces semisweet chocolate chips
  • 1 ounce vegetable shortening
  • 2 ounces finely chopped dry-roasted macadamia nuts


  1. Preheat the oven to 325 degrees F.
  2. Combine the coconut with the sweetened condensed milk, salt and vanilla in a medium mixing bowl.
  3. In the bowl of a stand mixer with a whisk attachment, beat the egg whites on medium speed until foamy. Gradually add the sugar and continue to whip the whites until medium peaks form, 6 to 7 minutes.
  4. Gently fold the egg whites into the coconut mixture. Scoop tablespoon-sized mounds onto a parchment-lined half sheet pan and bake for 20 to 25 minutes or until golden brown. Immediately transfer the parchment with the macaroons to a cooling rack. Cool completely before topping.
  5. Fill a 4-quart pot with enough water to come 2 inches up the side, set over medium heat and bring to a simmer. Combine the chocolate chips and shortening in a small metal or glass mixing bowl and set over the simmering pot. Stir occasionally until melted, then remove from the heat.
  6. Dip the cooled cookies in the chocolate mixture, sprinkle with the chopped macadamia nuts and place on parchment paper to set, about 30 minutes.

I won’t be trying this recipe, because I’m not a fan of coconut, but if you try it, let me know.

{December 1, 2008}   Vehicles are annoying

My truck was making a weird noise earlier. Josh thought it might be my bearings, but I wasn’t sure. Dad had checked those.

Thankfully the truck stopped making the noise, but it’s annoying that we didn’t find out what caused it. It also does a drop on the battery sometimes. Once we find a link to what caused it, next time we do it to test, it doesn’t do it anymore, and it hasn’t since. Crazy truck!!

Did get some windshield wiper fluid for the truck and car though. The de-icer stuff that’s awesome. We also have the spray version of it. That, and winter windshield wiper blades. Both vehicles needed them badly. 🙂

{December 1, 2008}   Failed NaNo

I would have won this year. I was all geared up to win, but sadly, I got a sinus infection and bronchitis in the last week. Bleh! I got 37,227 words though, in three weeks. That’s 1772 words a day, on average. That’s flipping awesome, IMO.

So, even though I didn’t win by NaNo standards, I won by my own. I wrote 32K more than I did last year. That’s great, for me 🙂

I think this year, I’ll definitely be participating in Writo de Mayo, and seeing if I can reach 50K with it then 🙂 Maybe, just maybe. :w00t:
